Ingredients:
- 500g of wheat flour
- 325ml of warm water
- 10g of salt
- 5g of dry yeast
- 400g of peeled tomatoes
- 300g of fresh mozzarella
- Fresh basil leaves
- Extra virgin olive oil
Instructions:
- In a large bowl, mix the flour and salt.
- Dissolve the yeast in the warm water and add it to the flour mixture. Mix until a dough forms.
- Knead the dough for 10 minutes until it is smooth and elastic.
- Let the dough rest for 1 hour or until it doubles in size.
- Preheat the wood-fired oven.
- Divide the dough into smaller balls and roll them out into thin discs.
- Spread the peeled tomatoes over the dough discs.
- Tear the mozzarella and distribute it over the discs.
- Add basil leaves and drizzle with olive oil.
- Bake in the wood-fired oven until the edges are golden and the cheese is melted.
